Chicken salad, tuna salad, or a Waldorf salad on rice crackers are yummy options. Veggies in dressings are good, but always check the labels on the dressings.

Dinner

For dinner, you can follow another easy formula: protein + veggie + grain. Chicken with steamed broccoli and rice is a very easy combination that works for both the simple, quick dinner and the elegant dinner party.

Spices and sauces can bring the dinner into the fancy zone if needed. Steak with a potato and grilled/stuffed tomato is gluten-free and delicious. Try grilled fish and asparagus with corn on the cob.

Look online for recipe alterations to classics: Fried chicken can be made gluten-free, gluten-free pizza crust is available, etc. Gluten-free living is not as difficult as you might think.
