baking question (egg allergy related)

In my quest to become my own version of Betty Crocker, I am getting frustrated. 18 mo old DS is PA, TNA, and EA. I can make great donuts and cookies, even made some awesome granola bars for 7 yr old DS but I keep hitting a stumbling block w/ cakes, cupcakes, muffins, and brownies. They rise up beautifully, then collapse in the center when they start to cool. I don't understand b/c I'm following the recipes (mostly in the FAN cookbook and Bakin' w/out Eggs). They still taste great, but I wouldn't want to serve them outside of my house. DH wonders if, w/out the egg, we need to either reduce the temp and cook longer or increase the temp and cook less time (gas oven).
Any other egg allergic folks have this problem, or am I just never going to get the hang of this "cooking thing"?

For muffins and quick bread, try using less a little less liquid, especially if the recipe you are using has lots of "wet" stuff -- like zucchini or pumpkin or banana. If the recipe calls for oil, for example, you may be able to cut it by as much as a third.
Baking in smaller pans may help, too -- my mini loaves look exactly like they are supposed to. (My full sized loaves are fairly level, but at least they aren't sinking anymore!)

Which granola recipe are you using? I don't have the FAAN cookbook, but I do have Bakin' Without Eggs.

Thanks! I'll try that...I'm using the granola bar recipe in Bakin w/out Eggs...we use chocolate chips, not raisins, and of course no nuts...they are really yummy, even my 7 yr old was impressed (he wants to take them in his lunchbox and 18 mo old DS w/ the allergy won't touch them LOL)! I cut them and wrapped them individually and then put them all into a zipper bag. Don't know if they would freeze well or not.

I up the baking powder, (usually add an extr tsp) in my cakes, may I have your donut recipe? I have tried a few and they are not quite right,

Claudia, I use the powdered sugar donut recipe in the FAN Cookbook (paperback)...I bought those individual mini bundt pans for these. If you (or anyone else) don't have that cookbook, I'll be happy to post the recipe...just let me know.

here is the recipe from the FAN cookbook:
Powdered Sugar Doughnuts
1 1/2 c flour
1/2 c sugar
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 c water
1/4 c margarine, melted* (check it for any other allergens)
1 1/2 tablespoons oil, 1 1/2 tablespoons water, and 1 teaspoon baking powder mixed together (mix these 3 things separately in a cup)
1/2 teaspoon vanilla extract
confectioners sugar
Preheat oven to 400 degrees. Grease mini Bundt pans. In large mixing bowl, combine flour, sugar, baking powder, cinnamon, nutmeg, and salt. Add water; margarine; oil, water, and baking powder mixture; vanilla. Blend thoroughly. Pour into prepared pans. Cook 12 minutes or until a cake tester inserted in center comes out clean. Remove from oven. Remove doughnuts from pan and place on wire rack to cool. Top generously w/ confectioners sugar.
Note: to make doughnut holes, use mini muffin tins instead of bundt pand and cook 9-10 minutes.
Makes about 7 doughnuts; I usually double the recipe.

This is from Bakin' w/out Eggs by Rosemarie Emro (her daughter is also PA so I highly recommend the book for any of you...she uses tree nuts in her recipes but it is easy to just leave them out):
1 c firmly packed brown sugar
1/3 c granulated sugar
1/2 cup butter or margarine softenend
2 1/4 tablespoons honey
1 tsp vanilla extract
1 c flour
1 teaspoon cornstarch
1 teaspoon ground cinnamon
1 teaspoon baking powder
1 1/2 c quick rolled oats
1 c crisp rice cereal
1 c chopped almonds (we left these out)
1 c raisins or semisweet choc chips
1/4 c wheat germ
preheat oven to 350. Lightly butter a 13x9x2 inch pan
In a large bowl w/ a handheld mixer set on medium beat sugars and butter or margarine until fluffy; blend in honey and vanilla. Slowly add flour, cornstarch, cinnamon, and baking powder. beat at low speed. W/ a wooden spoon, fold in oats, rice cereal, almonds (if used), raisins or chocolate chips, and wheat germ until well mixed. Place in prepared pan and bake for 20 mins until golden brown.
Cool completely and serve cut into bars.
(I tried to freeze these and they weren't as good...wish I could figure out a way to)
