Cream Cheese Mints

1 3oz package of cream cheese
1/2 tsp peppermint extract
3 cups sifted powdered sugar
Few drops desired food coloring
Granulated sugar

1. In a small mixing bowl stir together softened cream chees and peppermint extract. Gradually add powdered sugar, stirring until mixture is smooth. (Knead in the last of the powdered sugar with your hands.) Add food coloring; knead till food coloring is evenly distributed.
2. Form cream cheese mixture into 3/4-inch balls. Roll each ball in granulated sugar; place on waxed paper. Flatten each ball with the bottom of a juice glass or with the tines of a fork. (Or, sprinkle small candy molds lightly with sugar. Press about 3/4 to 1 tsp cream cheese mixture into each mold. Remove from molds.) Cover mints with paper towels; let dry overnight. Store in a tightly covered container in the refridgerator or freeze up to 1 month. Makes 38 to 60 pieces.

I'd love to try these, but we don't use philly cream cheese because of possible cross-contamination with tree nuts. I usually use plain sour cream and strain it to substitute for cream cheese. Mattsmom,thank you for the recipe. Christopher and I were talking yesterday,and I told him now that he is older this would be fun for him to make with my 9 year old while I try,and keep the little one out of his hair. I like Recipes that don't involve the stove because of the kids wanting to help. I made a recipe one time that was with marangue and pepermint candies. The kids did enjoy this also. Thank you again. gw-mom3-- I'm not sure if strained sour cream would work or not. =/ I would guess that if it works as a substitute in other sweets, it would, but I don't know. I have never bought Philadelphia Cream Cheese either, but not because of the PA, because it is so expensive! lol I only recently learned that cream cheese could be a problem for my PA son, and when I did I called the manufacturer (Wal-Mart's GV brand--look under Manufacturers) and was assured that it was safe. This is what we've been using since before Matt was born, and he's never had a problem with it.
Claire-- I like the no-stove recipes too! =) My little ones are still a bit young for even the no-stove ones though. Well, I say that, but Meagan will be 3 in 3wks. She likes to dump the ingredients in, and I let her help me use the mixer (my hand on hers) occasionally, so I guess she does help out a little. =) I made these after she had gone to bed, but now that I know just how easy they are to do, I think I'll let her give me a hand next time.

mattsmom, I think that it is wonderful that the 2 year olds can help us in the kitchen. The thing I like is that I am teaching him about reading the ingredients "even though I know it is safe already",and about being safe with Christopher. I have actually pretened to put Peanut butter in my wagon at the grocery store just to make sure the kids are paying attention. Christopher is well aware of what I am doing so I am not ever frightening him. My 9 year old will remove it and my 2 year old Screams very loudly that Christopher gets sick. I feel that this also may make a few customers aware of his allergy so I will allow him to scream about this particular thing. I have actually had customers ask why he gets sick. This way maybe one more person is getting educated by a 2 year old. I teach church school and I am going to make the cream cheese mints for the class because I bring Christopher with me to teach and this way I will have a safe party. Have a good day. Claire

Mattsmom, The mints were great! christopher took them in his lunch,and he let a few kids try them. The kids loved them. The best part is Christopher had food to share that the other kids loved and had never had. they asked him to give this recipe to them for their moms. We have made them twice and the second time we dipped them half way in chocolate,because they reminded us of The Andies candies. What a great treat they made for the kids I babysit. Only one did not like them because she is so picky. We have done blue and red so far. i am sure green will be tomorrow. Take care claire

That's great, Claire! I'm glad everyone liked them. I never thought about dipping them in chocolate, that sounds super yummy. Ok, now I'm going to have to try this. LOL I tried to make mine orange (for Thanksgiving) but they turned out a real pretty peach instead. LOL I'm doing red and green for Christmas. I hope those work better than the orange! =)

What kind of mint extract does everyone use? I called LorAnn and they don't recommend their extracts for PA/TNA people. What about mccormick? I know they make almond extract, and my daughter is also allergic to almond.

Gale, I just checked my extract and it is Mccormick. Christopher was fine after eating half of the batch. In fact we are due for some more he said. I may try to find an email to ask questions to the company about cross contamination. Thanks for your input. claire
