Gourmet (High-end) Chocolate for Baking?

Thought I'd put this here where the combat-cooks seem to hang out on occasion --

I'm looking for some high-quality, gourmet baking chocolate that is PA/TNA safe. It would need to be available online, as we live in rural area with no shops for this kind of item. I would only order this type of item during cooler months of Dec, Jan, Feb as we are in very warm area. (And that's baking season for special super-treats anyway!)

Anyone have recent experience & info for this type of product?
