great pancakes

My husband found this recipe for pancakes that we love. He and my sons will eat them cold out of the fridge. I prefer to heat them up. We have substitued 1 cup applesauce for the eggs and they were still good. We use rice milk or soy milk (I like rice better). I have never tried oat flour in them but I dont see why you couldnt use it. Here goes.

2 cups rolled oats
2 cups milk (any type)
Mix above 2 ingrediants and refrigerate overnight (you dont have to do this)
2 eggs slightly beaten
1/8 cup canola oil
1/4 cup raisons or currants or blackberries etc...
1 tsp baking powder
1 tsp baking soda
1/2 cup flour
1 tsp cinnamon
2 TBS sugar

mix the dry ingrediants and the wet ingrediants and put them together. batter is thick.

Best pancakes we ever had. Made them this am for breakfast and we just had a quick supper, rolled up some brown sugar ham lunch meat in the cold pancakes and it was really good. These will be great for picnics this year, especially if the peabutter works out.

I tried these pancakes using the applesauce since my 2 y/o DS is also dairy allergic. They were great, he ate so many of them! I also like the fact that they are more healthy than the regular pancakes with all that white flour. Thanks again for the recipe.
