On another thread, someone mentioned making their own Hot Chocolate Mix so I thought I'd post the one I've been making for years. My family loves this much more that the packaged mixes. I like it, too, because I know what's going into it. Enjoy! Donni
2 cups instant nonfat dry milk
1/3 cup unsweetened cocoa powder
3/4 cup sugar
1/2 teaspoon kosher salt
Mix all ingredients well. Measure 3 T. into a cup; fill with hot water to serve. Makes 15 servings.
Out of curiosity, what's kosher salt?
Kosher salt is a coarser grain salt and is usually preferred by chefs because it gives a less salty, less metallic taste to foods. Regular table salt can be used in equal quantities.
I'm sure it's a matter of personal tastes but since I "discovered" the value of Kosher salt, I haven't purchased regular table salt in 10 years. For the little salt shakers that have holes too small for the Kosher salt, I buy sea salt. However, sea salt is very fine and very salty--probably because it flows so freely that one gets too much! I use about 1/2 the amount of sea salt.
I'm familiar with sea salt. This is what we use here, since I discovered there's SUGAR in regular salt..
At the table we use coarse sea salt, with a grinder, if I'm translating that properly, sorta like what you often see for pepper. So it doesn't flow freely. But I never heard of Kosher salt before.

I also use the coarse grain sea salt in a grinder but not frequently. Look for Kosher salt where the regular table salt is sold. Morton's makes the most readily available Kosher salt in the States--dark blue box with the Star of David on it. I don't know what's available in Canada.

Now you just have to share your homemade mocha mix with me!

I put between two and three spoonfuls of your mix into my very tall cup, then throw in just a little less than half of my cup of fresh espresso, and top of with milk.

I don't know the shelf life. However, I have had "leftover" mix from one winter and used it the following winter without lost of taste, etc.
