Having a hard time finding any choc chips d/t ds being both PN and soy allergic. Found a recipe for chocolate bark on another website and it's pretty good, I've eaten several pieces and plan to chop the rest for chocolate chip cookies.
Recipe is:
8 oz. Unsweetened baking chocolate (I used Hershey's)
1/2 c shortening + 1tsp shortening (I used the new butter/canola blend from Land o Lakes)
1 tsp Vanilla Extract
2 cups powdered sugar

Melt chocolate and shortening together, add vanilla, stir in powdered sugar, if it gets too stiff knead with hands. Spread mixture out in thin layer and cover/refrigerate. (I spread it out on a foil lined cookie sheet and it seems to come off okay)
It tastes like dark chocolate, so it will probably be pretty good in a cookie.
It seems like you can change the shortening to match your needs (dairy free, soy free).
