Does anyone have an easy pn, tn, and egg-free recipe for eclair cake? I'm trying to head my mother in law off at the pass before Thanksgiving and Christmas. She always orders one from a local restaurant for our holiday meals and states "It's not Txgiving (or Xmas) w/out eclair cake". Since I can't be sure of the ingredients from this restaurant I wouldn't let her bring one to my house last year. I'd like to try to make one and keep everyone happy.
