Pancakes Egg Free (and of course P/TN)

Given the flurry of egg free recipes lately, I thought I'd post this one.

Due to conflicting family schedules, we had brunch for Thanksgiving (Canadian) and everyone enjoyed these pancakes along with everything else (Land of Nod Cinnamon buns of course)! It was a nice change from the big turkey dinner - we just might do it again!

Pancakes

1 1/2 Cups Flour
2 Tbls Sugar
5 tsp baking powder
1/2 tsp salt
2 Tbl canola oil (or your favorite (wouldn't use Olive oil though))
1 3/4 Cup Milk

Blend dry ingredients until well mixed. Add oil and stir until oil is distributed. Stir in cold milk until most of the lumps are gone. Let stand 30 minutes.

Pan fry in butter (hmmm butter) until golden brown. Keep warm till serving.

I made homemade blueberry sauce and we had a variety of syrups too!
