This is an easy pizza to make at home because the dough doesn't have to rise. I was looking for a simple pizza for those times when I don't have time to make a yeast bread crust, and I don't have a frozen pizza in the house.
I got the original recipe from a website called hillbillyhousewife.com and I made some adjustments so it is even easier to mix up.
Crust:
2 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon dry yeast
3/4 cup warm water
1/4 cup oil
Combine flour, baking powder, salt, and yeast, mix well. Drizzle in the oil and mix it with a fork or pastry blender until the mixture is crumbly. Pour in the warm water and mix with a spoon until all the flour is incorporated. Turn out onto countertop and knead just for about a minute, till it's smooth and flexible. The dough should be soft but not sticky. Put it on your pan and roll it out with a rolling pin.
Bake 8 minutes at 400 F (200C) then remove from oven and spread on the sauce and cheese (I use mozzarella and parmesan) and any other toppings if you want them.
Return pizza to oven and cook for another 10-12 minutes or until the cheese looks done.
I make my own sauce and keep it in small containers in the freezer. I don't really have a recipe--I just cook up a big batch when I have time. You can also buy prepared pizza sauce (it's thicker than jarred spaghetti sauce) or you can use jarred spag sauce and thicken it with tomato paste. Any sauce is fine. This is a quick recipe, not a gourmet pizza.
I love this recipe because it's so much better than the average frozen pizza. It's not as good as a real yeast bread crust, but it's soooo easy and really quick, so you can avoid using frozen pizzas.
