pWhat can I use in place of sour cream? Could I 'sour' goats milk and use it?/p

Some people use yogurt cheese. I think [url="http://www.cheesemaking.com"]www.cheesemaking.com[/url] sells machine-washable yogurt strainers which are wonderful. I use mine, however, to strain yogurt to make a low-fat cheese sauce. They also sell things to make other types of soft cheeses.

I will make my own yogurt out of gaots milk. It did not work today maybe tomorrow it will.

I heated the milk up and used a probiotic pill. I need to get some live culture, I guess. Then I have a yogurt machine that keeps it at the correct temp. Do you have any tips for me?

Not really. I use an insulated yogotherm for my various types of soft cheeses. It's just a large plastic container with an insulated foam interior to maintain the temperature of the mixture poured into it. Cheesemaking.com sells lots of different cultures if you don't have a source though. I've never heard of a probiotic pill used for yogurt making, but that makes sense. You have to understand, I'm no culinary whiz by any stretch of the imagination.

I had the probiotic on hand so I thought I would try it. It just does not work. You would think it would...........
I printed some recipes off Good Eats website, can not wait to try them!

If PA is the worry with the sour cream, which I am assuming it is not, I assume it is the dairy that is the problem, but if it is the PA, Cabot makes a safe sour cream. Cabot is a dairy in Vermont that makes cheese and butter (the best butter I ever tasted) and sour cream. They are so nice and helpful and say their products are totally safe. Just an FYI in case it is a PA worry!

I thought I read somewhere that Cabot makes cream cheese too. Do you know if this is true? Although I prefer my own homemade cream cheese, it sure would be nice to be able to buy some safe store-bought stuff in a pinch.
