what can I use when a recipe calls for canned soup?

I have 2 great crock pot cookbooks and can usually adapt the recipes for Justin who is allergic to pn, tn and egg. But a lot of them call for a can of cream of mushroom soup or cream of chicken soup. I'm not very comfortable w/ Campbell's and did a search here on soups w/out much success...has anyone tackled this hurdle, either w/ a "safe" soup or a replacement?

Cream Soup Base
Melt 3 Tbs butter in saucepan.
Blend in 3 Tbs flour and 1/4 tsp salt.
Cook and stir until bubbly.
Using wire whisk, stir in 1 cup of milk, stock or combination.
Cook just until smooth and thick.
Makes approx. equivalent to can of undiluted condensed soup.
Options:
Cream of chicken: Use chicken broth as half the liquid. Add 1/4 tsp poutry seasoning and some diced chicken, if desired.
Cream of mushroom: Saute 1/4 cup chopped mushrooms and 1 Tbs finely chopped onion in butter before adding flour.
Cream of celery: Saute 1/4 cup chopped celery and 1 Tbs finely chopped onion in butter before adding flour.
Cheese sauce: Add 1/2 cup grade cheese and 1/4 tsp dry mustard.

melissa if you don't mind my asking, what is it about campbell's that makes you uneasy? My son has PA and he's been extremely itchy 2 nights in a row after eating the mushroom soup. I was wondering if there is a hidden ingredient that I didn't know could cause a reaction.

I'll add these to my recipe stash! I definitely prefer your list of 4 or 5 ingredients over the Campbell's long list of soup ingredients.

MommySamuels...I've never given Justin any soups (he's not 2 yet...don't think he'd like it) but most of Campbells noodle soups have egg in them; just my weird hang up about cross contamination I think. If I knew that others had used Campbells mushroom or cream of chicken safely (and also had egg allergy) I would probably give it a try.

cream of mushroom with milk-free margarine, half stock and half rice milk. It was terrific!

That is great to know. We cant have the cream of soups because of milk allergies and it really cut out several recipes that I used to make when in a hurry.

I'm eager to try this too! It sure is a pain to have DA and a lot of recipes that call for cream soups. Our whole dinner rotation changed. Thanks!

In relation to Campbells soups, in Australia 2-3 of their soups contain pn - which is clearly stated on the label. If I remember rightly they were Cream of Chicken and Chicken and corn, so I won't buy any of their soups now just in case.

Just to let everyone know, I have used the above cream soup base recipe several times and it is great!
I use Earth Balance milk-free buttery spread and Chicken broth for the liquid.

If you have a Whole Foods in your area - check out their soups. Their labeling is getting so good that it not only has a clear allergen statement but (when applicable) it states: ...this facility does not process peanuts or tree nuts. Good Luck!!
