DS' kindergarten is preparing food for a 'Thanksgiving Feast'. Teacher wants to do corn muffins from a mix. I assume the best option is Betty Crocker Corn Muffin Mix IF it has no warning on it. Does anyone know if they've seen it with or without a warning?

Honestly I have not used a baking mix of any type in 4 years...I do strictly from scratch..but I know GM (Betty Crocker) mixes are used by those of you with the tightest of comfort zones.
Thanks, Luvmyboys

I use the Jiffy brand. DD's also allergic to egg so I use a recipe from Cooking Light where mashed banana is used. You add half a cup of banana and half a cup of milk to the mix and bake at 350 degrees for 22 minutes. I only made muffins with this recipe but I imagine you could make a loaf instead. Also, I've added blueberries to the batter and the muffins have been very yummy.

I've used Jiffy and Dr. Oetker corn muffin mixes. You can also make it from the recipe on the cornmeal box.

SOmewhere, somehow I recall that Jiffy ran their corn muffin mix down same lines as banana nut mix? I've not bought it in years, so was just wondering . . .
