Hi Everyone,
I am wondering if anyone has found a substitute for peanut butter in a peanut butter fudge recipe that works well. I love the soy butter cookies recipe I found on here, and was craving fudge. I was hoping someone out there had found one and wouldn't mind sharing.

I found this recipe on the peabutter website. Has anyone ever tried it? I wonder if it would work as well with Soynut butter? I may run out to the store and get some and try it. I don't have enough peabutter, and they don't sell it here.
PEABUTTER FUDGE:
1/4 cup white corn syrup
1/4 cup margarine or butter
2 cups NoNuts Golden Peabutter
1 1/4 cups sifted icing sugar
1 tsp. Vanilla
Line an 8"X8" pan with foil and grease foil.
Heat syrup and margarine or butter in microwave until margarine or butter is melted.
Add peabutter and stir until smooth.
Add icing sugar and vanilla and beat until smooth.
Spread in pan and pat down with a spatula.
Refrigerate until firm.
Lift foil and fudge from pan for easier cutting

Yes, icing sugar is the Canadian name for powdered sugar.
packrat, I just tried that recipe you posted.
It's extremely rich. Good, but not really a *fudge* exactly. 2 cups of Peabutter is almost a full jar - so it's rather expensive to make. I don't think I'll be making it again. (I'm not a big fan of extremely rich sweets.)
