It just dawned on me today that I can make these for Spencer.
CHOCOLATE - COVERED BANANA POPS
4-5 ripe bananas
9 wooden ice cream sticks or skewers
2 c. semi-sweet chocolate chips
2 tbsp. shortening
Sprickle with candy decrative skrinkles
Cut each crosswise & insert wooden stick into each banana piece (before peeling so that it does split), and place on wax paper covered tray, Freeze until firm (about 3 hours). In micro melt chocolate chips & shortening (I used a 2 cup measuring cup & sat it in a larger dish of water) Heating 1 min at a time until melted. Remove bananas from freezer just before dipping. Dip each piece into chocolate (I spooned it over the bananas); sprinkle with nuts (sprinkles [img]http://uumor.pair.com/nutalle2/peanutallergy/smile.gif[/img] ) Cover and return to freezer.

What sprinkles have you found that are safe?
I have been used B/C & Cakemate (McCormick) for the past 5 years. No Problems (when i first called 5 years ago I was told they were safe I have not checked since because I have a large stock)

I *LOVE* chocolate covered bananas! I usually slice the bananas into chips, then freeze, then coat...then put on wax paper to refreeze, then pop in a container. Pop-able chips :-) I have a hard time biting into a frozen banana, for some reason it hurts my teeth.

Actually, I had dark chocolate and he seemed to think it was great. I'll try it next time with a sweeter chocolate and see what he thinks.
When you say "shortening" are you referring to Crisco??
yep, it will just help it fro hardening to much.
What kind of chocolate chips are you using? I used to use Tropical source chocolate chips until my son developed peanut allergy. The bags says may contain traces of nuts. I cannot find a brand that tastes half way decent.
We use Enjoy Life or Guittard chocolate chips.
