Strawberry Pie

Haven't made one in a while.... might need tweaking but it used to be great.

For curst:
45 crushed vanilla wafer cookies (we use Keebler, they're egg-free)
2 tbs sugar
1/2 tsp vanilla extract
5 tbsp melted butter

For pie filling:
8 c strawberries, washed and hulled
2 tbsp water
2/3 c sugar
2 tbsp cornstarch
1 tbsp lemon juice
1 tsp vanilla extract

1. Heat oven to 350 F, combine ingredients for crust and press into 9 inch pie plate. Bake til just set and beginning to brown. Cool.

2. Slice 2 c berries and add to 2 tbsp water in saucepan. Bring to boil, mash berries, and press through strainer into 1c meauring cup. Add water to make up 1c--cool.

3. Mix sugar and cornstarchin saucepan and whisk in strawberry juice and lemon juice. Cook for about 5 min over medium heat. (Til thickened) Stir in vanilla.

4. Halve remaining berries (unless they are less than 1" in dia), place in pie shell and drizzle with glaze. (It helps to add some of the berries, add some glaze, then add more berries and more glaze.)
Chill at least 3 hrs, until set.
Top with whipped cream if desired.

Serves 8 for dessert... four for dinner. [img]http://uumor.pair.com/nutalle2/peanutallergy/biggrin.gif[/img]

Thanks for this recipe--I'm planning on making it soon. I have a terrible weakness for strawberries and blueberries. Ice cream could disappear of the face of the Earth and I wouldn't care, just as long as those two berries are around as long as I'm alive.
