Whatever you do, avoid the recipe for a soy sauce substitute that calls for balsamic vinegar and molasses. It tastes nothing like soy sauce.
Generally for a soy sauce sub you want something with a bit of a fermented flavor (that's where something like balsamic vinegar comes in), with a tiny bit of sour and a lot of salty.

Thanks for all your responses and for being so speedy--plum vinegar it is! I will try using this in place of soy sauce.
